Monday Munchies

It occurred to me over the weekend to post some recipes that have been highlighted at my place of employment, but may be applied to any place setting at home.  Let me give you a feel for what Food Outreach does and why the recipes could easily be a part of your daily eating habits.

Food Outreach is proud to be the St. Louis area’s nutrition program to help people with HIV/AIDS and Cancer maintain their health and independence. Food Outreach does this by having a talented full-time chef that provides all of our 1,900 clients, fresh from scratch meals.  These meals are carefully reviewed by our brilliant dietitian on staff.  Both the chef and dietitian factor in the needs of our clients to make sure the ingredients are benefiting the medications taken and to help strengthen their immune systems.

The recipe I have choosen is Tilapia with Mango Salsa. I add avocado to my mix to provide some heart healthy fats and black beans to boost up the fiber.  Tilapia supplies a good amount of lean protein and is complimented so well by the tomatoes and mango. I hope you enjoy as much as our clients do and myself!

Mango Salsa
1 large mango
5 roma tomatoes
1/2 cup red onion

1 avocado
1 cup canned black beans rinsed
2 tbsp fresh cilantro (or 2 tsp dried)
juice of one small lime
salt and pepper to taste

Tilapia
4 3-4 ounce tilapia fillets

1 tsp cumin
2 tsp oregano
salt and pepper to taste

Directions

For Mango Salsa-
Chop mango, tomato, avocado and onions and put in medium sized bowl. Add rinsed black beans, limejuice, cilantro, and salt and pepper.

For Tilapia-
Mix cumin, oregano, and salt and pepper in small dish. Rub spices on fish. 
In a nonstick pan (sprayed with Pam) cook the tilapia for approximately 3-4 minutes on each side, or until the fish flakes easily with a fork.

Serve hot fish with cold mango salsa on top, or on the side with a side of brown rice. Enjoy!
